You already know the drill, another luteal phase, another excuse to eat chips for dinner lol. For this week’s salad dip, I gave the OG cowboy caviar a little Mediterranean twist for the beginning of summer. She’s loaded with crunchy cukes, green bell pepper, grilled chicken, chickpeas, tomatoes, red onion, kalamata olives, and of course as much feta as your heart desires. I personally love green peppers in my greek salads, they add so much crunch and freshness! And since there is not a leafy green in sight, it holds up super well throughout the week aka very hot girl meal prep approved.
My inspiration to go greek this week was literally because I had a dinner party and one of my friends brought pita chips and hummus that we never got to. So in my typical fashion (aka unable to waste food), I centered my whole meal plan around an unopened tub of hummus and the rogue bag of pita chips in my pantry. Though I honestly cannot wait to get home from work this week, crack open that hummus (it’s caramelized onion flavored… yum), serve myself a bowl of this cowgirl caviar with ten little pita chips on the side, then go back for 30 more, all while sipping on a sparkling lemon water like the delusional wellness girlie I am ᵕ̈
as always, the below measurements are just suggestions: add more of what you like, less of what you don’t like. be free <3
ingredients:
salad:
- 1 pack mini cucumbers or one large cuke
- 1 pack cherry tomatoes or 2 roma tomatoes
- 1/2 red onion
-1 green bell pepper
-1/2 cup kalamata olives
-1 to 2 cooked chicken breasts (I used grilled chicken)
-1 can of chickpeas, drained and rinsed
-handful of dill or parsley, chopped
- feta cheese, as much as you want ᵕ̈
dressing:
- 4 tbsp olive oil
- 2 tbsp red wine vinegar
- juice of 1/2 lemon
- 1 tsp salt
- 1 tsp dried oregano
steps:
Make salad: Dice all the veggies, chicken, and feta into the same size. (I highly recommend removing the seeds from the cucumbers and tomatoes esp if meal prepping if you don’t want your salad to be watery)*
Make dressing: whisk everything together, taste, and add more salt if needed
Toss everything together and enjoy (with pita chips ofc!)
note:
*If you have one of those veggie chopper box things, this would be a great time to use it! HOWEVER, if you’re using grilled chicken do NOT do what I did and put it in the chopper- I learned the hard way. On that note- if anyone has any tips on how to get chicken out from being stuck in the chopper please let me know. And if not, let me know if there is a veggie chopper out there that’s superior than the rest bc I’m probably in the market for a new one :’)
