This is one of my go-to girl lunch/dinners because all the ingredients have a long shelf life and are always in my fridge. Except for the chicken- if I don’t have chicken on hand, I always have frozen chicken nuggets or strips in the freezer that I just throw into the air fryer for a crispy chicken caesar wrap moment, which is even better.
The beauty of making your own chicken caesar wrap is that you have can customize it to be exactly the way you want every time. If you’re a texture person, add extra croutons. If you’re a sauce girl, go heavy on the dressing. If you’re a high protein girlie, double the chicken (without anyone charging you $5 for it). And if you’re a sauce AND high protein girlie like me, go with a greek yogurt dressing! I love the bolthouse farms greek yogurt dressings bc they’re healthy, yummy, and easy- the hot girl kitchen mantra.
Oh, and it of course has to be thoroughly chopped so you get a little of everything in each bite ᵕ̈
ingredients:
note: this is essentially a no-recipe recipe (the best kind). the beauty of making your own cc wrap is that you get to add as much or as little of everything as you want. i put my own personal preferences in parentheses but it is only a suggestion.
romaine lettuce, chopped (1 head)
chicken breast (half a rotisserie chicken breast)
croutons
parmesan cheese (2 tbsp)
greek yogurt caesar dressing (4 tbsp)
a large/burrito sized tortilla (I typically do a lower carb one bc a carb heavy lunch makes me sleepy)
steps:
assemble salad: throw everything except the tortilla into a bowl and chop the sh*t out of it with a salad chopper. if you don’t have a salad chopper (one of the best things i’ve ever bought on amazon), just chop everything into little pieces before you throw it into the bowl
wrap: throw everything from the bowl onto the tortilla and wrap*
sear: spray/drizzle a little oil on a hot pan and put the seam side down to sear the wrap shut. flip over after a minute or two or until desired toastiness. slice in half.
*little note on wrapping a wrap: my method of fitting a big ass salad into a wrap is essentially grabbing the bottom end of the tortilla and pulling it all the way over and past the filling so that you can tuck everything in as you roll and wrap it back towards you. Remember to also tuck the sides in as you roll. Honestly, these things are much easier to learn visually (for me at least) so if I’ve confused you even more, pls disregard and just watch a few videos of chipotle employees wrapping burritos- they are the true MVPs.
